How to Preserve Game & Fish
In “How to Preserve Game & Fish” you will learn the newest recommendations for preserving your bounty of wild game and fish. This course is for the beginner to advanced hunter or fisherman who wishes to learn the different ways that they can preserve their game or fish for enjoying year round. In this course you will learn how to safely make jerky, a brief overview of sausage, how to smoke your fish and the difference in canning it over non-smoked fish, pressure canning and the best methods and packaging for freezing your game and fish. Included in the course are recipes and related literature.
Pre-registration is required and class size is limited. This class is held in the Main Conference Room at the WSU Clark County Extension @ Heritage Farms.

Pressure canner gauge testing will be available for cost of $5 per gauge at the end of the event.
