{"id":1089,"date":"2022-06-16T10:29:00","date_gmt":"2022-06-16T17:29:00","guid":{"rendered":"https:\/\/extension.wsu.edu\/efnep\/?p=1089"},"modified":"2024-06-17T10:25:57","modified_gmt":"2024-06-17T17:25:57","slug":"mexican-pinwheels","status":"publish","type":"post","link":"https:\/\/extension.wsu.edu\/efnep\/2022\/06\/16\/mexican-pinwheels\/","title":{"rendered":"Mexican Pinwheels"},"content":{"rendered":"\n<p><a href=\"https:\/\/wpcdn.web.wsu.edu\/wp-extension\/uploads\/sites\/3037\/2024\/06\/L9-Mexican-Pinwheels.pdf\">Mexican Pinwheels (pdf)<\/a><\/p>\n\n\n\n<p>Makes: 6 servings (5 pinwheels per serving)<br>Preparation Time: 10 minutes<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul><li>3 \u00bd tablespoons (2 ounces) cream cheese, softened<\/li><li>2 tablespoons canned corn, drained<\/li><li>2 tablespoons canned, chopped green chiles, drained<\/li><li>2 teaspoons minced onion<\/li><li>2 tablespoons salsa<\/li><li>3 (10 inch) flour or whole wheat flour tortillas<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol><li>Wash hands with soap and water.<\/li><li>Drain the corn and green chiles.<\/li><li>Collect, chop, and measure all ingredients before starting to prepare the recipe.<\/li><li>Mix cream cheese, corn, green chiles, onion, and salsa in a bowl.<\/li><li>Spread mixture on tortillas, roll up tightly, and wrap in plastic wrap to chill.<\/li><li>When ready to eat, remove plastic wrap.<\/li><li>Cut in 1 inch slices, and serve immediately, or store in the refrigerator until ready to serve.<\/li><li>Refrigerate leftovers within 2 hours.
