{"id":1367,"date":"2023-02-27T09:33:25","date_gmt":"2023-02-27T17:33:25","guid":{"rendered":"https:\/\/extension.wsu.edu\/efnep\/?p=1367"},"modified":"2024-06-12T10:40:12","modified_gmt":"2024-06-12T17:40:12","slug":"skillet-mac-and-cheese-2","status":"publish","type":"post","link":"https:\/\/extension.wsu.edu\/efnep\/2023\/02\/27\/skillet-mac-and-cheese-2\/","title":{"rendered":"Skillet Mac and Cheese"},"content":{"rendered":"\n<p><a href=\"https:\/\/wpcdn.web.wsu.edu\/wp-extension\/uploads\/sites\/3037\/2024\/06\/L7-Skillet-Mac-and-Cheese.pdf\">Skillet Mac and Cheese (pdf)<\/a><\/p>\n\n\n\n<p>Makes: 12 servings (\u00bd cup per serving)<\/p>\n\n\n\n<p>Preparation Time: 5 minutes<\/p>\n\n\n\n<p>Cooking Time: 25 minutes<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients <\/h2>\n\n\n\n<ul><li>3 tablespoons butter<\/li><li>\u00bd large onion, chopped<\/li><li>3 cups finely chopped fresh spinach or \u00be cup frozen chopped spinach (thawed and squeezed dry)<\/li><li>2 tablespoons all-purpose flour<\/li><li>3 \u00bd cups milk*<\/li><li>\u00be cup water*<\/li><li>2 \u00bd cups uncooked elbow macaroni<\/li><li>8 ounces cheddar cheese, shredded (2 cups shredded)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions <\/h2>\n\n\n\n<ol type=\"1\"><li>Wash hands with soap and water.<\/li><li>If using fresh spinach, wash under cold running water.<\/li><li>Collect, chop, shred, and measure all ingredients before starting to prepare the recipe.<\/li><li>Melt the butter in a large skillet over medium heat.\u00a0<\/li><li>Add the onion, and cook for another 2 minutes. Add the spinach, and cook for 2 minutes or until wilted.<\/li><li>Add the flour, and cook for 1 minute, stirring constantly.<\/li><li>Add the milk and water, stirring frequently.\u00a0\u00a0Bring the mixture to a low boil and then reduce heat.<\/li><li>Add the uncooked macaroni.\u00a0\u00a0If the macaroni is not completely covered by liquid, add additional water to bring the level of the water just over the macaroni.<\/li><li>Cover and simmer, over low heat, for 8 to 9 minutes, stirring occasionally.\u00a0\u00a0The mixture will thicken as it simmers.<\/li><li>Once the macaroni is tender, remove from the heat.\u00a0\u00a0<\/li><li>Add the shredded cheese, and stir to combine.\u00a0\u00a0Cover and let sit for 5 minutes before serving.<\/li><li>Refrigerate leftovers within 2 hours. Eat within 3 to 5 days.<ol><li><strong><em>*At elevations of 3,000 feet and above:<\/em><\/strong>\u00a0use 3 cups of milk and \u00bd cup of water instead of the amounts listed above.\u00a0<\/li><\/ol><\/li><\/ol>\n\n\n<section  class=\"wsu-section\"  >\r\n        \n\n<p><strong><em>Be creative!<\/em><\/strong>&nbsp;Try using whole wheat pasta.
