{"id":1373,"date":"2023-02-27T09:44:38","date_gmt":"2023-02-27T17:44:38","guid":{"rendered":"https:\/\/extension.wsu.edu\/efnep\/?p=1373"},"modified":"2024-06-12T10:05:35","modified_gmt":"2024-06-12T17:05:35","slug":"broccoli-cheese-soup-2","status":"publish","type":"post","link":"https:\/\/extension.wsu.edu\/efnep\/2023\/02\/27\/broccoli-cheese-soup-2\/","title":{"rendered":"Broccoli Cheese Soup"},"content":{"rendered":"\n<p><a href=\"https:\/\/wpcdn.web.wsu.edu\/wp-extension\/uploads\/sites\/3037\/2024\/06\/L7-Broccoli-cheese-soup.pdf\">Broccoli Cheese Soup (pdf)<\/a><\/p>\n\n\n\n<p>Makes: 5 servings (1 cup per serving)<\/p>\n\n\n\n<p>Preparation Time: 5 minutes<\/p>\n\n\n\n<p>Cooking Time: 30 minutes<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients <\/h2>\n\n\n\n<ul><li>3 tablespoons vegetable oil<\/li><li>1 medium onion, diced<\/li><li>3 tablespoons all-purpose flour<\/li><li>4 cups chopped broccoli<\/li><li>3 cups water<\/li><li>1 chicken bouillon cube<\/li><li>\u00bd teaspoon black pepper<\/li><li>\u00bc teaspoon garlic powder&nbsp;<\/li><li>\u00bd cup milk<\/li><li>4 ounces cheese, shredded (1 cup shredded)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions <\/h2>\n\n\n\n<ol type=\"1\"><li>Wash hands with soap and water.<\/li><li>Wash broccoli under cold running water.<\/li><li>Collect, dice, shred, and measure all ingredients before starting to prepare the recipe.<\/li><li>Heat oil in a large pot over medium heat. Add onion, and cook for about 2 minutes until the onion is soft and clear.<\/li><li>Add flour to the pot, and cook for 1 minute, stirring continuously.<\/li><li>Add broccoli, water, bouillon cube, pepper, and garlic powder.\u00a0Reduce heat to medium low, and cook for about 20 minutes or until the broccoli is tender. Stir occasionally to prevent soup from sticking to the pot.<\/li><li>Remove from heat, add the milk and cheese, and stir until cheese melts.<\/li><li>Place back on the stove, and cook on low heat for about 2 to 3 minutes until soup is thoroughly heated. Serve immediately.<\/li><li>Refrigerate leftovers within 2 hours. Eat within 3 to 5 days.<\/li><\/ol>\n\n\n\n<p><strong><em>Note:<\/em><\/strong>&nbsp;This recipe freezes well.
