{"id":360,"date":"2022-06-09T13:17:38","date_gmt":"2022-06-09T20:17:38","guid":{"rendered":"http:\/\/extension.wsu.edu\/efnep\/?p=360"},"modified":"2022-06-09T13:17:38","modified_gmt":"2022-06-09T20:17:38","slug":"skillet-lasagna","status":"publish","type":"post","link":"https:\/\/extension.wsu.edu\/efnep\/2022\/06\/09\/skillet-lasagna\/","title":{"rendered":"Skillet Lasagna"},"content":{"rendered":"\n<p><a href=\"https:\/\/wpcdn.web.wsu.edu\/extension\/uploads\/sites\/91\/2024\/06\/L1-Skillet-Lasagna.pdf\">Skillet Lasagna (pdf)<\/a><\/p>\n\n\n\n<p>Makes: 8 servings (1 cup per serving)<br>Preparation Time: 10 minutes<br>Cooking Time: 20 minutes<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul><li>8 uncooked lasagna noodles (or 4 cups of any other type of cooked pasta) <\/li><li>1 (15 ounce) carton small curd cottage cheese<\/li><li>1\u20442 cup grated parmesan cheese, divided in half<\/li><li>1 1\u20444 teaspoons Italian seasoning<\/li><li>Nonstick cooking spray<\/li><li>1 (24 ounce) jar tomato pasta sauce, without meat<\/li><li>1 (10 ounce) package of frozen spinach, thawed and squeezed dry* <\/li><li>8 ounces mozzarella cheese, shredded (2 cups shredded cheese)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol type=\"1\"><li>Wash hands with soap and water.<\/li><li>Cook the lasagna noodles\/pasta according to package directions.  If you are using &#8220;oven ready&#8221; lasagna noodles, be sure to add 1 1\/2 cups of water to the skillet.<\/li><li>Collect, shred, and measure all ingredients before starting to prepare the recipe.<\/li><li>In a large bowl, mix the cottage cheese, 1\u20444 cup parmesan cheese and Italian seasoning.<\/li><li>Spray a large skillet well with cooking spray. Do not place skillet on heat until all ingredients are in skillet.<\/li><li>Spread half of the jar of sauce in the sprayed skillet.<\/li><li>Top with 4 lasagna noodles or half of the other pasta.<\/li><li>Spread half the cottage cheese mixture over the pasta.<\/li><li>Top with half of the spinach.<\/li><li>Sprinkle half of the mozzarella cheese over the spinach.<\/li><li>Repeat with the remaining ingredients in this order: pasta, cottage cheese mixture, spinach, pasta sauce, and mozzarella cheese.<\/li><li>Sprinkle with the rest of the parmesan cheese (1\u20444 cup), and cover.<\/li><li>Place skillet on the heat and turn heat to medium low. Cook for about 20 minutes until the cheese melts and the sauce if bubbling. Remove from heat and let stand for 5 minutes (covered) before serving.<\/li><li>Refrigerate leftovers within 2 hours. Eat within 3 to 5 days.<\/li><\/ol>\n\n\n<section  class=\"wsu-section\"  >\r\n        \n\n<p>*Thaw spinach in the refrigerator overnight or in the microwave on low power.
