{"id":655,"date":"2022-06-14T11:58:56","date_gmt":"2022-06-14T18:58:56","guid":{"rendered":"https:\/\/extension.wsu.edu\/efnep\/?p=655"},"modified":"2022-06-14T11:58:56","modified_gmt":"2022-06-14T18:58:56","slug":"winter-italian-vegetables","status":"publish","type":"post","link":"https:\/\/extension.wsu.edu\/efnep\/2022\/06\/14\/winter-italian-vegetables\/","title":{"rendered":"Winter Italian Vegetables"},"content":{"rendered":"\n<p><a href=\"https:\/\/wpcdn.web.wsu.edu\/extension\/uploads\/sites\/91\/2024\/06\/L4-Winter-Italian-Vegetables.pdf\">Winter Italian Vegetables (pdf)<\/a><\/p>\n\n\n\n<p>Makes 6 servings (1 cup per serving)<br>Preparation time: 15 minutes<br>Cooking time: 15 to 20 minutes<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul><li>2 \u00bd cups uncooked spiral pasta<\/li><li>2 cups water, divided in half<\/li><li>1 cup broccoli florets (fresh or frozen)<\/li><li>1 cup cauliflower florets (fresh or frozen)<\/li><li>2 medium zucchini, sliced<\/li><li>1 medium onion, chopped<\/li><li>1 cup chopped celery<\/li><li>1 (8 ounce) can tomato sauce<\/li><li>2 teaspoons dried basil<\/li><li>Salt (optional)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol><li>Wash hands with soap and water.<\/li><li>Cook the pasta according to package directions.<\/li><li>Wash all vegetables under cold running water.<\/li><li>Collect, cut, and measure all ingredients before starting to prepare the recipe.<\/li><li>Put 1 cup of water in a large skillet, and bring to a boil.<\/li><li>Add all the vegetables, cover, and cook for 5 minutes.<\/li><li>Add tomato sauce, remaining cup of water, and basil. Simmer for 5 more minutes.<\/li><li>Stir in cooked pasta. Taste, and add a small amount of salt if desired.<\/li><li>Refrigerate leftovers within 2 hours.
