{"id":680,"date":"2022-06-14T12:45:43","date_gmt":"2022-06-14T19:45:43","guid":{"rendered":"https:\/\/extension.wsu.edu\/efnep\/?p=680"},"modified":"2022-06-14T12:45:43","modified_gmt":"2022-06-14T19:45:43","slug":"black-bean-and-couscous-salad","status":"publish","type":"post","link":"https:\/\/extension.wsu.edu\/efnep\/2022\/06\/14\/black-bean-and-couscous-salad\/","title":{"rendered":"Black Bean and Couscous Salad"},"content":{"rendered":"\n<p><a href=\"https:\/\/wpcdn.web.wsu.edu\/extension\/uploads\/sites\/91\/2024\/06\/L5-Black-Bean-and-Couscous-Salad.pdf\">Black Bean and Couscous Salad (pdf)<\/a><\/p>\n\n\n\n<p>Makes: 8 servings (\u00bd cup per serving)<br>Preparation Time: 10 minutes<br>Cooking Time: 10 minutes<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul><li>\u00bd cup vegetable broth<\/li><li>\u00bd cup uncooked couscous<\/li><li>1 \u00bd tablespoons vegetable oil<\/li><li>1 teaspoon apple cider vinegar<\/li><li>\u00bd teaspoon ground cumin<\/li><li>1 tablespoon fresh lime juice (optional)<\/li><li>1 (15 ounce) can black beans, drained and rinsed<\/li><li>\u00bd onion, minced<\/li><li>\u00bd red or green pepper, minced<\/li><li>\u00bd cup frozen thawed or canned whole kernel corn<\/li><li>Salt and black pepper to taste<\/li><li>2 tablespoons chopped fresh cilantro (optional)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol><li>Before starting to prepare the recipe:<ol><li>Wash hands with soap and water.<\/li><li>Wash red or green pepper and cilantro (if using) under cold running water.<\/li><li>Wash and juice the lime into a small bowl (if using).<\/li><li>Drain and rinse the black beans and corn (if using canned corn).<\/li><li>Collect, mince, and measure all ingredients.<\/li><\/ol><\/li><li>Bring broth to a boil in a small pot, and stir in the couscous.<\/li><li>Cover the pot, and remove it from the heat. Let stand for 5 minutes.<\/li><li>In a large bowl, whisk together oil, vinegar, cumin, and lime juice (if using).<\/li><li>Add beans, onion, green pepper, and corn to the vinegar and oil mixture, and toss.<\/li><li>Fluff the couscous well with a fork, breaking up any chunks. Add to beans and vegetables, and mix well.<\/li><li>Taste. Add salt and black pepper if desired.<\/li><li>Add cilantro (if using) and serve.<\/li><li>Refrigerate leftovers within 2 hours.
