{"id":694,"date":"2022-06-14T13:07:19","date_gmt":"2022-06-14T20:07:19","guid":{"rendered":"https:\/\/extension.wsu.edu\/efnep\/?p=694"},"modified":"2022-06-14T13:07:19","modified_gmt":"2022-06-14T20:07:19","slug":"simple-fish-tacos","status":"publish","type":"post","link":"https:\/\/extension.wsu.edu\/efnep\/2022\/06\/14\/simple-fish-tacos\/","title":{"rendered":"Simple Fish Tacos"},"content":{"rendered":"\n<p><a href=\"https:\/\/wpcdn.web.wsu.edu\/extension\/uploads\/sites\/91\/2024\/06\/L6-Simple-Fish-Tacos.pdf\">Simple Fish Tacos (pdf)<\/a><\/p>\n\n\n\n<p>Makes: 6 servings (2 tacos per serving)<br>Preparation Time: 15 minutes<br>Cooking Time: 4 to 5 minutes<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul><li>1 tablespoon vegetable oil<\/li><li>2 tablespoons lemon juice<\/li><li>1 packet (1.25 ounces) taco seasoning<\/li><li>\u00be cup sour cream<\/li><li>\u00bd cup chopped, fresh cilantro (optional)<\/li><li>Nonstick cooking spray<\/li><li>12 (6 inch) corn tortillas<\/li><li>1 pound tilapia fillets (4 fillets) frozen, thawed<\/li><li>2 cups shredded cabbage<\/li><li>2 large tomatoes, diced<\/li><li>Lime wedges (optional)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol><li>Wash hands with soap and water.<\/li><li>Wash all produce under cold running water.<\/li><li>Collect, cut, and measure all ingredients before starting.<\/li><li>In a small bowl, mix oil, lemon juice, and 1 \u00bd teaspoons of taco seasoning. Set aside.<\/li><li>In another bowl, combine sour cream, cilantro (if using), and 2 T of taco seasoning mix. Set aside.<\/li><li>Spray a large skillet with cooking spray. Add tortillas to the skillet one at a time. Heat briefly on both sides over medium heat until warm and soft. Wrap in 2 layers of foil, put on a plate, and cover with another plate to keep warm.<\/li><li>Spray the skillet with cooking spray again. Place fish fillets in the skillet. Wash hands with soap and water before continuing.  Cook over medium heat for 1 \u00bd minutes until golden brown, flip, and cook another 1 \u00bd minutes until golden brown on the other side.<\/li><li>Pour the lemon juice mixture over the fish. Cook for another 1 to 2 minutes, until internal temperature reaches 145F. When tilapia flakes easily with a fork, it is done. Break the fish into bite-sized pieces.<\/li><li>Fill tortillas with fish, and top with a bit of the sour cream mixture.<\/li><li>Top with shredded cabbage, diced tomato, and a squeeze of fresh lime (if using).<\/li><li>Refrigerate leftovers within 2 hours.
