{"id":718,"date":"2022-06-14T13:41:23","date_gmt":"2022-06-14T20:41:23","guid":{"rendered":"https:\/\/extension.wsu.edu\/efnep\/?p=718"},"modified":"2022-06-22T12:00:34","modified_gmt":"2022-06-22T19:00:34","slug":"broccoli-cheese-soup","status":"publish","type":"post","link":"https:\/\/extension.wsu.edu\/efnep\/2022\/06\/14\/broccoli-cheese-soup\/","title":{"rendered":"Broccoli Cheese Soup"},"content":{"rendered":"\n<p><a href=\"https:\/\/s3.wp.wsu.edu\/uploads\/sites\/2096\/2017\/11\/L7-Broccoli-Cheese-Soup.pdf\">Broccoli Cheese Soup (pdf)<\/a><\/p>\n\n\n\n<p>Makes: 5 servings (1 cup per serving)<br>Preparation Time: 5 minutes<br>Cooking Time: 30 minutes<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul><li>3 tablespoons vegetable oil<\/li><li>1 medium onion, diced<\/li><li>3 tablespoons all-purpose flour<\/li><li>4 cups frozen chopped broccoli<\/li><li>3 cups water<\/li><li>1 chicken bouillon cube<\/li><li>\u00bd teaspoon salt<\/li><li>\u00bd teaspoon black pepper<\/li><li>\u00bc teaspoon garlic powder<\/li><li>\u00bd cup milk<\/li><li>4 ounces (1 cup) shredded cheese<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol><li>Collect, dice, shred, and measure all ingredients before starting to prepare the recipe. Heat oil in a large pot over medium heat. Add onion, and cook for about 2 minutes until the onion is soft and clear.<\/li><li>Add flour to the pot, and cook for 1 minute, stirring continuously.<\/li><li>Add broccoli, water, bouillon cube, salt, pepper, and garlic powder.<\/li><li>Reduce heat to medium low, and cook for about 20 minutes or until the broccoli is tender. Stir occasionally to prevent soup from sticking to the pot.<\/li><li>Remove from heat, add the milk and cheese, and stir until cheese melts.<\/li><li>Place back on the stove, and cook on low heat for about 2 to 3 minutes until soup is thoroughly heated. Serve immediately.<\/li><li>Refrigerate leftovers within 2 hours. Eat within 3 to 5 days.<\/li><\/ol>\n\n\n<section  class=\"wsu-section\"  >\r\n        \n\n<p><strong><em>Note:<\/em><\/strong> This recipe freezes well.
