{"id":767,"date":"2022-06-14T14:10:14","date_gmt":"2022-06-14T21:10:14","guid":{"rendered":"https:\/\/extension.wsu.edu\/efnep\/?p=767"},"modified":"2022-06-22T11:59:54","modified_gmt":"2022-06-22T18:59:54","slug":"skillet-mac-and-cheese","status":"publish","type":"post","link":"https:\/\/extension.wsu.edu\/efnep\/2022\/06\/14\/skillet-mac-and-cheese\/","title":{"rendered":"Skillet Mac and Cheese"},"content":{"rendered":"\n<p><a href=\"https:\/\/s3.wp.wsu.edu\/uploads\/sites\/2096\/2017\/11\/L7-Skillet-Mac-and-Cheese.pdf\">Skillet Mac and Cheese (pdf)<\/a><\/p>\n\n\n\n<p>Makes: 12 servings (\u00bd cup per serving)<br>Preparation Time: 5 minutes<br>Cooking Time: 25 minutes<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul><li>3 tablespoons butter<\/li><li>\u00bd large onion, chopped<\/li><li>3 cups finely-chopped fresh spinach or \u00be cup frozen chopped<\/li><li>spinach (thaw and squeeze dry)<\/li><li>2 tablespoons all-purpose flour<\/li><li>1 cup milk, skim or fat-free<\/li><li>\u00bd cup water<\/li><li>2 \u00bd cups Cooked elbow macaroni<\/li><li>8 ounces (2 cups) shredded cheddar cheese<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol><li>Cook the macaroni noodles according to package instructions.<\/li><li>Wash the spinach (if using fresh spinach).<\/li><li>Collect, chop, shred, and measure all ingredients before starting to prepare the recipe.<\/li><li>Melt the butter in a large skillet over medium heat.<\/li><li>Add the onion, and cook for another 2 minutes. Add the spinach, and cook for 2 minutes.<\/li><li>Add the flour, and cook for 1 minute, stirring constantly.<\/li><li>Add the milk and water, stirring frequently. Bring the mixture to a simmer.<\/li><li>Add the cooked macaroni.<\/li><li>Cover and simmer, over low heat, for 8 to 9 minutes, stirring occasionally. The mixture will thicken as it simmers.<\/li><li>Add the shredded cheese, and stir to combine. Cover and let sit for 5 minutes before serving.<\/li><li>Refrigerate leftovers within 2 hours. Eat within 3 to 5 days.<\/li><\/ol>\n\n\n<section  class=\"wsu-section\"  >\r\n        \n\n<p><strong><em>Be creative!<\/em><\/strong> Try using whole wheat pasta.
