{"id":773,"date":"2022-06-14T14:16:20","date_gmt":"2022-06-14T21:16:20","guid":{"rendered":"https:\/\/extension.wsu.edu\/efnep\/?p=773"},"modified":"2022-06-22T11:59:42","modified_gmt":"2022-06-22T18:59:42","slug":"salmon-patties","status":"publish","type":"post","link":"https:\/\/extension.wsu.edu\/efnep\/2022\/06\/14\/salmon-patties\/","title":{"rendered":"Salmon Patties"},"content":{"rendered":"\n<p><a href=\"https:\/\/s3.wp.wsu.edu\/uploads\/sites\/2096\/2017\/11\/L7-Salmon-Patties.pdf\">Salmon Patties (pdf)<\/a><\/p>\n\n\n\n<p>Makes: 6 servings (1 patty per serving)<br>Preparation Time: 10 minutes<br>Cooking Time: 5 to 10 minutes<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul><li>1 (14.75 ounce) can salmon*<\/li><li>1 tablespoon lemon juice<\/li><li>Cold water<\/li><li>\u00bc cup minced celery (optional)<\/li><li>1 tablespoon minced green pepper (optional)<\/li><li>\u00bd medium onion, minced<\/li><li>2 large eggs<\/li><li>\u2153 cup bread crumbs or cracker crumbs<\/li><li>2 tablespoons all-purpose flour<\/li><li>\u215b teaspoon black pepper<\/li><li>1 tablespoon vegetable oil<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol><li>Wash fresh vegetables (if using).<\/li><li>Collect, mince, and measure all ingredients before starting to prepare the recipe.<\/li><li>Open salmon, and drain liquid into a liquid measuring cup. Add lemon juice and cold water to the salmon liquid to make \u00bd cup liquid total, and set aside.<\/li><li>Put the salmon in a separate mixing bowl. Mix in the celery (if using), green pepper (if using), and onion.<\/li><li>In another small bowl, beat the eggs. Then, add them to the salmon mixture.<\/li><li>Add the bread or cracker crumbs, flour, pepper, and the salmon liquid mixture to the salmon mixture, and stir until all ingredients are mixed together.<\/li><li>Use \u2153 cup measuring cup to measure salmon mixture. Shape into a \u00bd inch thick patty, and place on a plate. Repeat to make 6 patties.<\/li><li>Heat the oil in a skillet over medium heat, then add 3 patties.<\/li><li>Cook for about 2 to 3 minutes (or until golden brown) on each side.<\/li><li>Remove patties from skillet, and place on a clean paper towel-lined plate to drain. Cook remaining 3 patties, then serve immediately.<\/li><li>Refrigerate leftovers within 2 hours.
