Learn to efficiently and safely harvest your own poultry from a master butcher. This rigorous class in poultry processing has been developed in partnership with WSU Extension – San Juan County.  The hands-on workshop is geared towards the home flock farmer and aspiring small-scale commercial grower.  The equipment used will be sourced from NABC’s poultry processing equipment program (available for rent from one of four mainland locations– see Hands-On Poultry Processing.

The class will be held at SWEET EARTH FARM in Friday Harbor on San Juan Island. Included will be overviews of processing methods, sanitation as related to food safety and quality control, and a practical, hands-on master class where students will process live poultry into packaged product.  Students will slaughter, eviscerate and package birds purchased direct from a local farm and take their work home to prepare and enjoy. Students will need to bring a cooler and ice.

Students will gain a greater understating and appreciation of processing technique and food safety protocols.   Passing the optional exam at day’s end earns students a Certificate of Completion.  The class and its materials will be translated into Spanish, as requested, by our bi-lingual instructor.

Students will be expected to dress appropriately.  Class will be held in various locations: outside, and in the classroom.   Students must bring their own rubber boots to cover feet and ankles (i.e., not clogs or Crocs). We will work with propane and other hazards: absolutely no smoking is permitted, and students must be over the age of 18.

The cost of attendance is $45, which includes a processed pasture-raised chicken, all workshop supplies (disposable gloves, hair nets, aprons, bags, knives, etc.), and lunch.
