Leaf It Up is a program that’s part of the WSU 4-H Youth Advocates for Health, and it’s putting together microgreens starter kits. According to the group, these microgreens are highly nutritious. They contain up to 40 times more vitamins, minerals and antioxidants than their mature counterparts. They’re easy to grow, even in a college dorm room. In the summer, they were able to assemble and hand out more than 600 kits to colleges across the state.

As one teen program member explains, “There’s a blackout period, so it just sits in its box on the side, and then towards the end of its life, you just put it by a window. So it’s super easy. Water it once a day. Very limited care.”

The next step for the group is a trip to the nation’s capital, where their project will compete for a $5000 sustainability grant.
