Creamy Beet Dip
Time needed: 20 minutes
Serving: About 4
This beautiful and brightly colored dip is a healthy and delicious way to include beets in a meal. Easy to prepare, this dip can be used with raw veggies, chips, or crackers. Or try it as a sandwich spread!
| INGREDIENTS 3/4 cup cooked and cooled beets (Scrub beets gently under running water before cooking 1 can garbanzo beans (or 1 1/2 cups cooked) 2 teaspoons garlic powder or 2 large garlic cloves 2 Tablespoons cup tahini paste, or substitute almond butter 2 Tablespoons lemon juice 1 teaspoon cumin powder 2 Tablespoons olive oil Salt to taste DIRECTIONS 1. Wash hands with soap and water. 2. Blend until creamy. You may add a couple of tablespoons of water if needed to reach a creamy consistency. 3. Enjoy! Store in the refrigerator for up to 5 days, or freeze for future use. Tips: Cook beets by cutting into quarters and boiling until soft. You can peel before or after cooking. Feel free to adjust seasonings in recipe to taste. |
Kids in the Kitchen
Give your child a beet and a small vegetable brush to help teach them how to wash produce. Letting your child help in the kitchen is a great way to create precious memories as they develop math skills (counting and measuring), develop small muscle movement, and eye-hand coordination.
Beets are exciting to young children because of their bright color. Grated beets can be added to so many different recipes-add to mashed potatoes, macaroni and cheese, muffins, or pancakes to increase nutrition and to make mealtimes more exciting!
Like carrots, beets are root vegetables. Talk with your child about the difference between above and below, explaining that beets grow below the soil. You can reserve the beet top, place in a saucer of shallow water near a sunny window, and watch edible beet greens sprout! Beets are also fun to use in a stamping activity!

How to Store Beets
Beets can last a very long time if stored properly! First, punch a few small holes in a plastic bag. Next, place beets in a bag and store in the crisper drawer of the refrigerator. Using this method, beets will keep for 1-3 months. Scrub gently under running water before cooking.
