Maple-Roasted Carrots

Carrots are a very versatile vegetable, and people enjoy them prepared in a variety of ways. This recipe may be enjoyed as a side dish or snack. Children may help prepare them by mixing the marinade and tossing the carrot slices. These may be easily made ahead of time and reheated as needed.
| INGREDIENTS 2 pounds Carrots, scrubbed with a clean vegetable brush under running water. 2 Tablespoons Olive Oil 3 Tablespoons Maple Syrup 1/4 teaspoon Garlic powder 1/4 teaspoon Salt Optional – 1 Tablespoon dried parsley or thyme DIRECTIONS 1. Wash hands with soap and water. 2. Peel the carrots, or leave unpeeled depending on preference. If the carrots are thick, cut them in half lengthwise; if not, leave whole. Slice the carrots into slices about 1/3 inch thick. 3. In a large mixing bowl add the remaining ingredients and mix until combined. Add the carrots and toss them to coat. 4. Transfer the carrots to a baking tray (sheet pan) in 1 layer and roast in the oven for about 15-20 minutes, until browned and tender. Optional: Add spices such as powdered ginger or cinnamon. Swap the maple syrup for equal parts honey, or swap for equal parts brown sugar and add 3T orange juice concentrate. |

Children may be more likely to try fruits and vegetables if they can touch and see them before cooking. When children are trying carrots during meal time, ask questions like:
What do they taste like? Sweet? Salty? Crunchy? Soft? What color is the carrot? Are there other colors of carrots? How do carrots grow? (roots underground, leaves above) What part of the carrot do we eat? (root)

How to Store Carrots
If carrots have green leaf top, remove the greens as soon as possible as they draw away moisture from the root. Carrots can last up to a month if properly stored. Place unwashed carrots in a perforated plastic bag or wrapped in a paper towel in the coolest part refrigerator. Wash just before using, since the added moisture in the bag could cause spoilage. Carrots begin to go limp once exposed to air.
