Carrot and Jicama Salad

Time needed: 20 minutes

Servings: 6

Carrots are a very versatile vegetable, and people enjoy them prepared in a variety of ways. This recipe may be enjoyed as a side dish, or a great addition to fish tacos! Children can participate in the preparation of this easy dish, and if jicama is unavailable, apple makes a great substitute! You can also add chili powder or Tajin seasoning for added flavor!

INGREDIENTS
2 cups coarsely grated carrot
2 cups cut jicama (1/4×1-inch sticks)
2 cups bite-sized orange segments (any type)
2 teaspoons vegetable oil
2 Tablespoons orange juice (juice from about 1/2 orange)
1 Tablespoon packed brown sugar
2 teaspoons lime juice (juice from about 1/2 lime)
¼ teaspoon salt

DIRECTIONS
1. Wash hands with soap and water.
2. To clean root vegetables and whole oranges, scrub the outer layer and rinse under running water.
3. In a large bowl, mix jicama, carrot, and orange.
4. In a small bowl or jar with a tight lid, combine oil, orange juice, honey, lime juice, and salt.
5. Mix or shake well.
6. Pour over the salad and stir lightly.
7. Serve right away.
8. Refrigerate leftovers within 2 hours.

Children enjoy snacking on carrots with dip or cooked with a light glaze.

Try adding a carrot to a batch of mashed potatoes!

Add grated carrots to pancakes to increase nutrition and add sweetness.

Count the number of carrots that were included in the Harvest for Healthy Kids basket.

Ask your child look at the carrots – this helps develop observation skills. Are they different sizes? Sort the carrots or arrange them according to size.

Are they different colors? Most carrots are orange-ask your child if they can name any other orange-colored fruit or vegetable.

How to Store Carrots

If carrots have green leaf top, remove the greens as soon as possible as they draw away moisture from the root. Carrots can last up to a month if properly stored. Place unwashed carrots in a perforated plastic bag or wrapped in a paper towel in the coolest part refrigerator. Wash just before using, since the added moisture in the bag could cause spoilage. Carrots begin to go limp once exposed to air.
