Quick Refrigerator Cucumber Pickles

Time needed: 15 minutes

Servings: 4

Many children love pickles! With this easy recipe, cucumbers can be preserved and stored in the refrigerator for up to three months.

INGREDIENTS
2/3 cup vinegar (any type)
1/3 cup water
1 teaspoon salt
2 to 4 teaspoons sugar
1 to 2 Tablespoons seasonings (Seasoning Ideas listed below)
1 1/2 cups cucumber slices

DIRECTIONS
1. Wash hands with soap and water.
2. Clean cucumbers with running water before slicing
3. In a small saucepan, heat the vinegar, water, salt and sugar until the mixture simmers. Stir until the salt and sugar are dissolved and remove from heat.
4. Place the seasonings in the bottom of a clean pint-sized glass jar. Add the cucumber slices, packing them closely together. Leave about 1/2 inch space at the top of the jar.
5. Fill the jar with the warm vinegar mixture to cover the cucumbers. Close the jar with a clean lid and refrigerate for 1 to 3 days to allow flavors to develop.
6. Store pickles in the refrigerator. Use within 3 months.

Choose one or many of the seasonings below for your pickles!
Ideas for fresh seasonings: basil, cilantro, dill, garlic, ginger, hot pepper, onion, oregano, thyme.
Ideas for dry seasonings: bay leaf, celery, cumin or dill seed, dried chili, peppercorn, pickling spice, tumeric.
Try this: 1 clove garlic, 1/8 teaspoon red pepper flakes, and 1 teaspoon dill seed.

Kids in the Kitchen

Cucumbers are fun for kids to prepare and eat! Use a safety knife or a disposable plastic knife to let children improve fine motor skills by practicing cutting cucumbers. You can peel the cucumber and/or cut it into slices to make this task easier. Count the number of slices made from one cucumber.

For a fun activity, make cucumber sandwiches!

Spread your favorite cream cheese (non-dairy cream cheese is an easy substitute) onto a slice of bread, then use cucumbers and other fruits or vegetables to make a funny face!

How to Store Cucumbers

For best quality, store unwashed cucumbers in the refrigerator for up to a week. Sliced cucumbers should be tightly wrapped or place in a food storage container and refrigerated for up to 3 days.
