Raspberry Overnight Oats

Time needed: 10 minutes

Servings: About 2

This is an easy recipe, perfect for busy families who want a healthy and delicious breakfast option! One serving provides you with food from three of the five MyPlate food groups. For best flavor, choose local Skagit raspberries harvested in peak season in early to mid-summer, with some varieties producing a fall crop as well.

INGREDIENTS
1 cup fresh raspberries, gently rinsed
1/2 cup rolled oats
1/4 cup plain or vanilla yogurt
1/2 cup milk of your choice
1 TB chia seeds (optional)
Optional-add 2-3 TB of your choice of other chopped fruit, nuts, seeds, or spreads such as peanut butter

DIRECTIONS
1. Wash hands with soap and water. Wash hands with soap and water. Clean radishes by rinsing under running water.
2. In a small bowl, mix oats, yogurt, milk, and chia seeds. If using optional items, include this in the mix.
3. Using a pint-sized jar, layer oat mixture with raspberries and other optional ingredients.
3. Refrigerate overnight or at least 8 hours.
4. Best enjoyed within 24 hours.


TIP: This makes a great healthy, cool, and refreshing summer snack as well as a breakfast meal!

Kids in the Kitchen

Letting your child help in the kitchen is a great way to create precious memories as they develop math skills (counting and measuring), develop fine motor skills, and eye-hand coordination.

Counting is a math skill, and raspberries are easy to count. Count with your child the number of raspberries that come in the Harvest for Healthy Kids basket. Have your child guess how many raspberries will fit in a one-cup measuring cup, then measure out to see how close they are to the actual measure.

How to Store Raspberries

The trick is to keep berries cold and dry so they won’t mold. For the short term: arrange berries (without washing or removing the stems) on a paper towel-lined tray and cover with plastic wrap; then refrigerate. Before eating or using them, wash the berries gently under cool water.
