Spinach and Strawberry Salad

Spinach is so versatile! This easy-to-prepare salad makes use of raw spinach, and the addition of sweet strawberries encourages even picky eaters to enjoy a fresh and nutritious salad. What other colorful veggies or fruits could you add?
| INGREDIENTS Salad Fixings: 5 cups fresh baby spinach 1 cup strawberries, sliced 1/4 red or purple onion, thinly sliced 1 ripe avocado, sliced (optional) Salad Dressing: 1/4 cup lemon juice 1/4 cup extra-virgin olive oil 2 tablespoons honey or maple syrup 1 teaspoon spicy brown mustard 1/4 teaspoon salt 1 teaspoon poppyseeds DIRECTIONS 1. Wash hands with soap and water. Clean spinach and strawberries by rinsing them under running water. 2. To make the dressing: Mix together the lemon juice, oil, honey, mustard, and salt in a small jar with a lid. Shake it vigorously for 30 seconds. Taste and adjust any seasoning as needed. Add the poppy seeds and shake again, then set them aside for the flavors to meld. 3. To assemble the salad: Place the spinach in a large serving bowl, then top it with strawberries, red onion, and avocado. Drizzle the dressing over the top and gently toss, just before serving. If you plan to save this salad for later, store the salad ingredients separately from the dressing for best shelf life. The dressing should last 4 days in an airtight container in the refrigerator. |

1 pound fresh spinach = 12 cups raw = 1 cup cooked

How to Store Spinach
Wash spinach just before using. Storing wet spinach can speed spoilage. To Store: Put the unwashed spinach in a bag or container with a lid. Add a couple of paper towel sheets. The paper towel will absorb the moisture naturally released from the spinach and will slow the rotting process. Change the paper towel as needed. Store at the bottom of the fridge or in the vegetable drawer.
