Roasted Sugar Snap Peas

Time needed: 10 minutes

Servings: About 4

Sugar Snap Peas are often eaten raw, served with or without dip. This recipe is a super-easy and delicious way to cook sugar snap peas. Because peas may become tougher towards the end of their storage time, cooking can be recommended for improved texture and flavor. Skagit sugar snap peas are typically available in spring and early summer, and again in the fall months. Take advantage of the local harvest for great flavor and nutrition!

INGREDIENTS
1 1/2 cups sugar snap peas
2 teaspoons vegetable oil
1 teaspoon low-sodium soy sauce
½ teaspoon salt
¼ teaspoon black pepper
DIRECTIONS
1. Wash hands with soap and water. Wash peas in cold water, drain.
2. Preheat oven to 400°F. Lightly grease a large baking pan.
3. Place the sugar snap peas in a large bowl.
4. Sprinkle with oil, soy sauce, salt, and black pepper. Toss to coat sugar snap peas with seasonings.
5. Spread the peas onto the baking sheet.
6. Bake for 8 to 10 minutes. Stir a couple of times while roasting.

Optional: Add lemon zest or 1T lemon juice in place of soy sauce.

Sugar Snap peas are a fun item to use in activities to help your child learn about nutrition, develop fine motor skills, counting, and more!

For a fun activity, use a plastic safety needle and string to create a snap pea bracelet or necklace: Tie one end of the string or ribbon to the plastic safety needle and tie a knot at the other end. String peas onto the necklace by poking them with the needle. Remove the needle and tie both ends of the string together to make a bracelet or necklace. Now that your pea necklace is finished, it’s time to wear it and eat it!

Fun Fact: Did you know that beans are available in colors other than green? There are many varieties of beans, and a range of colors including yellow, purple, red, green, and even striped!

How to Store Sugar Snap Peas

Sugar-snap peas should last for up to 5 days after purchase. Refrigerate these beans unwashed and tightly wrapped in a plastic bag. Rinse peas under running water just before using. Tip: Recently harvested peas are best for fresh eating. You can cook older peas as they may toughen toward the end of their storage
