Red Meat Butchery Workshop for Processors

Are you a small to mid-size PROCESSOR who works with local or regional producers? Join this workshop with WSU Meat Science Experts!

When: Monday March 25th

9:30am-4pm

Morning Session

  • Interactive butchery demo highlighting consumer trends in the NEW WA Meat Up Mobile Butchery Truck!
  • Discussion: how do you improve efficiency to increase profitability
  • Discussion: what are consumer preferences and why it matters

Afternoon Session

  • WSDA Grant & Assistance Opportunities and Regulatory Q&A
  • Discussion: how do you communicate with and keep customers
  • Discussion: what affects meat quality, yield, and value
  • Discussion: does your price reflect your full costs

Where: Sequim High School

601 N Sequim Ave, Sequim, WA

Cost: $25 includes lunch and materials

Limit to 10 participants
