Game CollageIn “How to Preserve Game & Fish” you will learn the newest recommendations for preserving your bounty of wild game and fish. This course is for the beginner to advanced hunter or fisherman who wishes to learn the different ways that they can preserve their game or fish for enjoying year round. In this course you will learn how to safely make jerky, a brief overview of sausage, how to smoke your fish and the difference in canning it over non-smoked fish, pressure canning and the best methods and packaging for freezing your game and fish. Included in the course are recipes and related literature.

Pre-registration is required and class size is limited. This class is held in the Main Conference Room at the WSU Clark County Extension @ Heritage Farms.

For your convenience you may register and purchase tickets online via Brown Paper Tickets.  Or you can register by calling 360-397-6060 ext 5733 or come to the WSU Extension Office/Heritage Farms and register at the reception desk. Pressure canner gauge testing will be available for cost of $5 per gauge at the end of the event.
